Makes 4 servings
Ingredients:
- 1 container of gnocchi
- 1 package of smoked sausage
- 1 onion
- 1 can of diced tomatoes
- 1 cup spinach or mixed greens
- 1/2 cup mozzarella cheese
- 1/4 cup Parmesan cheese
- 1/2 cup chicken broth
- 1 tbsp olive oil
- 3 garlic cloves
- 1 tsp of rosemary, sage, parsley and thyme
Instructions:
Preheat oven to 425. In a large cast iron skillet over medium heat add olive oil and minced garlic and onion and stir until translucent. Add sausage and cook for 3 more minutes. Add tomatoes, chicken broth and spices and greens and cook until greens are wilted then stir in gnocchi and top with cheese then bake for 18-20 minutes.

This is so good! Totally comforting. Rich flavors. Perfect for a dinner party or just when you want something so completely delicious you almost feel guilty eating it.
