Cheesy broccoli quinoa

Makes 4 servings


  • 1 cup quinoa
  • 2 cups chicken stock
  • 1 bag frozen broccoli
  • 1 cup mozzarella shredded


Add quinoa and chicken stock to a pot and bring to a boil. Reduce heat and cover for 15 minutes. Meanwhile broil broccoli for 10 minutes. Combine quinoa and broccoli and top with 1/4 cup mozzarella per serving. Enjoy!

My notes on this recipe:

This was such a great recipe. Was super simple to make and the flavor was outstanding considering the amount of ingredients. This one was a hit for the whole family.
