Bean and cheese quesadilla

Makes 1 serving

  • 2 tortillas
  • 1/2 cup refried beans
  • 1 cheese stick(shredded)
  • 8 tbsp salsa


Spread refried beans onto one tortilla then add shredded cheese and top with the second tortilla. Place on cast iron griddle that’s been heated on medium then let cook until the tortilla has turned a nice golden brown then flip and cook until that side is also golden brown. Plate and slice with a pizza cutter. Serve with salsa and enjoy!

My notes on this recipe:

This is a great comfort meal for me, it’s very filling and the taste is so satisfying. I really enjoy Mexican dishes and this one is just so easy to make, has a good amount of protein without any meat! Great choice for a meatless Monday!
