Lunch meal prep- 6 days of salads

Makes 6 salads

Ingredients

  • 1 box of spinach 16 oz
  • 1 bunch of radishes
  • 2 cucumbers
  • 1 small bag of baby carrots or carrot chips
  • 1 small box of cherry tomatoes
  • 1 box of sliced mushrooms
  • 3 colored bell peppers
  • 6 salad sized Tupperware

Instructions

Divide spinach into the 6 containers. Divide and add mushrooms, tomato and carrots. Chop and divide cucumbers, radish and bell peppers

My notes on this recipe

This is a total money saver, I bought all organic ingredients and this came to $21.58 for 6 days of lunches. That’s $3.50 a day. Could you imagine buying an organic salad anywhere for $3.50?? You can top this with tuna or chicken or any meat really or just add some nice avocado as a vegan alternative.
