Mixed Berry pie

Makes 2 pies

Ingredients

  • Pie crust 2 sets
  • 2 packages of blueberries 12 oz total
  • 2 packages of raspberries 12 oz total
  • 1 package of strawberries
  • 2 cups of cherries
  • 12 tbsp tapioca starch
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 2 tbsp butter
  • 1 1/2 cup sugar

Instructions

Preheat the oven to 375. Place pie crust in pie pans leaving other two for the top.

In a large bowl combine all the fruit (washed and cut if desired)

In another bowl mix all the dry ingredients then combine with the fruit and mix well

Divide the mixture between the two pie shells then sprinkle 1 diced tbsp of butter to each pie

Cover the pies with the remaining pie crust. You can lattice or cover fully with just a slit- whatever makes you happy!

Bake on the middle rack for 50 minutes.

Remove, cool and enjoy!

My notes on this recipe

This is a delightful pie! Perfect with vanilla ice cream. Wonderful addition to a summer bbq. There is really a lot of variation you can do with the recipe as well by mixing different fruit as long as you keep to about 4 cups of fruit per pie. You can get fancy and egg wash the crust if you like as well.
