- 2 lb London broil cubed
- 2 cups baby carrots
- 3 sweet potatoes chopped
- 32 oz beef bone broth
- 1-2 packets of brown gravy mix
- Salt and pepper to taste
In a large pot over high heat add the cubes of meat and let them brown while you chop the sweet potatoes then add them in while stirring occasionally. Then add the carrots and the broth and simmer for 1 hour. Lastly add in the brown gravy packets (use 2 if you want a thicker gravy) wait about 2 minutes for the gravy to thicken then serve with salt and pepper to taste.
My notes on this recipe
This is a super easy recipe that turns out amazingly! Total comfort food with little effort involved. The sweet potatoes almost melt into part of the gravy (these can be added later in the cooking process to hold shape better) but the flavor is wonderful!
