- 2 acorn squash
- 2lb chicken thighs
- 4 garlic cloves
- 1 lemon
- 1/4 tsp Black pepper x2
- 2 tbsp Butter
- 1 tsp Salt x2
- 1/4 tsp Chili powder
- 4 tbsp Olive oil
- 2 tbsp Maple syrup
- 1 tsp Ground sage
Preheat oven to 500 and line a large baking sheet with parchment paper.
In a medium bowl mix olive oil, minced garlic, sage, salt and pepper then set aside.
Wash then thinly slice lemon
Add chicken and lemon slices to the bowl with olive oil and spices and toss.
In a small pot over medium heat add butter, maple syrup, chili powder, salt and pepper until butter is melted then set aside.
Wash and halve and remove seeds from the squash then cut into 1/4 slices then add to the baking sheet. Drizzle the maple butter mixture over them and toss to coat.
Then place the chicken and lemon slices on top of the squash and bake for 15 minutes.
