Root Stew

Makes 6-8 servings


  • 1 onion
  • 2 lbs stew meat
  • 2 yellow beets
  • 1 large beet
  • 4 baby sweet potatoes
  • 1 small bag multi colored baby carrots
  • 2 cups beef stock
  • 1 cup vegetable broth
  • 1 cup beef bone broth
  • 1 tbsp salt
  • 7-10 garlic cloves


Chop onion and place into a large pot along with stew meat and sauté on high until the meat is browned. Chop and add the rest of the vegetables then add all the stock and broth, garlic and salt. Bring to a boil then reduce and simmer for 2-3 hours. Serve and enjoy!
