Simple potato hash

Makes 4-6 servings

Ingredients:

  • 1 bag baby potatoes diced
  • 1 bell pepper diced
  • 1 onion diced
  • 3 cloves of garlic minced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

Add all ingredients to a large frying pan and sauté constantly over medium to medium high heat for about 10 mins or until potatoes are cooked through. Enjoy!

My notes on this recipe:

This recipe is wonderful! There are so many meals you could make with this- add some eggs and wrap in a tortilla and you’ve got breakfast burritos. Pair with chili and cheese on a cool night for some real comfort. So good!
