- 1 cup Cooked mixed vegetables
- 6 pita breads
- 6 tbsp hummus
- 1 container of mini mozzarella balls
- 1 avocado
Line a baking sheet with parchment and place the pita bread on it/them (I was able to fit about 3 to a sheet) add 1 tbsp of hummus to each pita. Add vegetables and mozzarella and avocado then broil until cheese is melted and enjoy!

This is such an easy and mouth watering dinner. The hummus gives so much flavor and it’s light but filling. Perfect for anytime you have some left over roasted vegetables.
