Easy rice and beans

Makes 4 servings


  • 1 cup brown rice
  • 1 can diced tomatoes
  • 1 can black beans
  • 1 fajita mix seasoning pocket
  • 2 cups water


Put all the ingredients into a rice cooker and cook for 1 hour. Stir and enjoy! Can be done on stove top as well.

My notes on this recipe:

I normally make this at lunch and use it as a salad topper. It’s simple and filling and the flavor is on point. Great vegan protein. You could also make it non-vegan by adding some cooked ground beef or turkey to the mix.
