Makes 4-6 servings
Ingredients:
- 12 eggs
- 1/4 cup half and half
- 12 breakfast sausages
- 1 tbsp butter
- 1 tbsp olive oil
- 3 or 4 cups stir fry vegetables
- 2 oz Gouda cheese shredded
Instructions:
Preheat the oven to 325. In an oven safe pan. I use a deep cast iron pan for this. Add butter and olive oil over medium heat and add stir fry vegetables and bite sized chopped sausages and cook until the vegetables are slightly tender. Meanwhile in a large bowl beat eggs with half and half then pour in the pan with the vegetables and sausages and gently stir add shredded cheese to the top then bake for 20 minutes. Enjoy.

This is so simple and yet it turns out so elegantly. Great for any occasion. I tend to use this when I need a quick dinner but want something packed with protein and vegetables.
