Mandarin Orange Chicken salad

Makes 6-8 servings


  • 1 whole chicken
  • 1 cup mandarin oranges
  • 2 large celery sticks
  • 1 bunch of green onions
  • 1/4 mayo
  • 1/2 cup sour cream
  • Bread for serving


Boil whole chicken for 45 minutes to an hour. Let cool then remove chicken from the bones and place shredded chicken in a large mixing bowl. Add mandarin oranges, chopped celery, chopped green onions, mayo and sour cream and mix well. You can serve right away or refrigerate and then later Serve and enjoy!

This recipe is delicious. Cooking the chicken takes some time but if your in a hurry you could buy a pre-baked chicken from your local grocery store. One thing that I really love about this recipe is that it can be used many ways. Such as a filling for a sandwich or a topping on a salad or just eat it alone as a quick snack.
