Makes 2 servings
Ingredients:
- 3/4 cup vanilla Greek yogurt (recipe)
- 1/2 cup vanilla Greek yogurt (for serving)
- 1 package blackberries
- 2 tbsp agave nectar or favorite syrup
- 1/2 cup four
- 1 tsp baking soda
- 1 egg
- Butter – to coat pan
Instructions:
In a large mixing bowl add vanilla Greek yogurt, flour, baking soda and egg. Heat a medium skillet over medium heat and coat with butter. Add half of the mixture to the pan and cook for few minutes then flip and cook for a few more minutes. Repeat with second pancake. Serve with blackberries and vanilla Greek yogurt with a drizzle of agave nectar over the entire thing. Enjoy!

This is by far the best pancake recipe I’ve ever had! It’s more of a fair style pancake than your average buttermilk. It reminds me of a pancake mixed with French toast and it just fluffs up so nicely. The taste is great! Perfect if you want to impress a guest or if your just wanting something fancy as a treat for yourself!
