Pineapple chicken bake

Makes 5 servings


  • 1 lb chicken thighs
  • 1 15oz can of chopped pineapple (fresh could also be used)
  • 1 tsp paprika
  • 1 cup rice
  • 2 1/4 cup water
  • 1 tbsp olive oil


Line a baking sheet with parchment paper and heat the broiler on high. Add rice and water to a pot and bring to a boil. Meanwhile spread chicken out on the lined baking sheet and sprinkle with paprika then scatter pineapple around the chicken and place in the oven. The rice should be at a boil by this point, cover and reduce heat to low and let simmer for 15 minutes. The chicken and rice should be done at the same time and ready to serve.

This is a delicious and simple recipe. If your a big fan of pineapple you can add more. I think this would also be nice with a splash of liquid aminos or soy sauce.
