Makes 4 servings
Ingredients:
- 8 eggs
- 1 fennel chopped
- 1 tbsp olive oil
- 1/2 cup green olives chopped
- 1 tomato chopped
- 1/4 artichoke hearts chopped
- 1/2 cup goat cheese crumbled
Instructions:
Preheat oven to 325.
In a cast iron skillet over medium heat add oil and fennel and cook for 5 minutes then add tomato, artichoke and olives and cook for 3 more minutes. Whisk eggs then add to skillet then stir gently and let this cook for a couple minutes. Crumble goat cheese on the top then transfer to the oven and bake for 5 to 10 minutes (until center is set and doesn’t wiggle when moved)
