Chicken sausage bake

Makes 6 servings


  • 1 lb Italian sausages
  • 1 lb chicken thighs
  • 1 red onion
  • 1 red bell pepper
  • 8 oz mushrooms
  • 3 garlic cloves
  • 6 cherry peppers
  • 2 tbsp olive oil
  • 2 cups cherry tomatoes
  • 1/2 chicken stock
  • 1 tbsp balsamic vinegar
  • 2 tsp oregano


Heat a large cast iron pan on medium heat and add half of oil and sausage and cook until browned. Transfer sausage to a plate then cook chicken in the same pan for 3 minutes per side then transfer to the plate of sausage. Then add all the chopped vegetables to the pan and sauté for 4 minutes then add garlic and cook for 2 more minutes. Then add the stock, balsamic vinegar, oregano and cherry tomatoes and stir. Then add chicken and sausage and stir gently then place the pan into the oven at 400 for 30 minutes then serve and enjoy!

This one is a bit spicy for me but the family enjoyed it. It’s pretty easy to make and I love that it finishes in the oven and that gives me a little down time while it finishes cooking.
