Greek Salad – lunch prepping

Makes 6 salads

Ingredients:

  • 3 small heads Iceberg lettuce
  • 1 cucumber
  • 1 box cherry tomatoes
  • 2 cans garbanzo beans
  • 1 1/2 cups Greek Olives
  • 1 small red onion
  • 1 block 8oz feta cheese
  • 1/2 cup banana peppers
  • Greek Salad dressing

Instructions:

Gather your salad containers and lay them all out for filling. Chop the iceberg lettuce and divide equally into the containers. I used about half a head per container. Continue this way with all the ingredients- chop and divide! Lastly, measure out your salad dressing into little containers. I like to use Jell-O shot containers from the grocery store- they work just wonderful for any type of dressing or sauce to go! Happy lunching!
