Broccoli cheddar oatmeal

Makes 4 servings


  • 2 cups chicken stock
  • 1 cup steel cut oats
  • 1 head broccoli (cooked and chopped)
  • 7oz cheddar cheese
  • 1 small onion
  • 1 tbsp olive oil


Diced onion and add to a pan over medium heat with olive oil. Fry until softened.

Add steel cut oats and broth and then bring to a boil then lower heat and cover for 7 minutes.

Cook and chop broccoli

Add broccoli and cheese to the oatmeal and enjoy!

My notes on this recipe:

This recipe is incredible! It’s so good! A total comfort dish without any of the guilt! It’s super filling without being heavy and the flavor is OMG so delicious!!
