Sheet pan Nachos

Serves 2


  • 1 can black beans
  • Bag of tortilla chips
  • 1/4 cup chicken stock
  • 2 cups shredded cheese
  • 2 tbsp jalapeños
  • 4 green onions chopped
  • 1/2 cup guacamole
  • 1/2 salsa


Line a baking sheet with parchment then spread an even layer of chips on it. Drain and pour black beans into a food processor and add chicken stock then blend until smooth. Drizzle the bean mixture over the chips. Sprinkle jalapeños, green onion and cheese on top. Broil until cheese is melted and bubbling. Serve with guacamole and salsa and enjoy!

This is a great sheet pan meal for any occasion but perfect for any sporting event at your house or even just movie night! Always a hit for everyone in the house. Make multiple batches using various toppings that everyone likes and maybe ditch the spicy peppers for the kids nachos!
