Makes 6 servings
Ingredients:
- 4 sweet potatoes
- 3 lb beef roast
- 1 onion
- 1 cup grape juice
- 2 cups beet, carrot & orange mixed juice
- 3 twigs rosemary
- 3 twigs thyme
Instructions:
Peel and chop the sweet potatoes into 2″ pieces. Chop onion then add all the ingredients into the crockpot. Cook on high for 8-10 hours. Serve and enjoy.
My notes on this recipe:
This is great to do first thing in the morning and have ready and waiting for you by dinner time. The meat is completely tender and falling apart and the sweet potatoes basically melt in your mouth.
