Salmon and Blueberry Brussel Sprouts

This makes 4 servings

Ingredients:

  • 4 frozen salmon burgers
  • 2 cups frozen brussel sprouts
  • 1/4 tbsp olive oil
  • 1 garlic clove minced
  • 1 tsp rosemary
  • 1 cup blueberries
  • 1 tbsp balsamic vinegar
  • 1/4 cup water
  • 1 tbsp fresh mint

Instructions:

Add salmon burgers and brussel sprouts to a lined baking sheet and broil for 10 minutes flipping at the half way point. Meanwhile in a small sauce pan add olive oil, garlic and rosemary and sauté until fragrant. Add blueberries, water and balsamic vinegar and let cook until it thickens- smashing the blueberries if needed. Once the salmon and brussel sprouts are cooked divide onto four plates and drizzle with even amounts of the blueberry sauce.

My notes on this recipe:

This is a wonderfully easy recipe with powerful flavor! The blueberry sauce is absolutely amazing with the salmon! The brussel sprouts add some nice color to the dish and add some extra protein.
