- 2 ripe banana
- 4 large eggs
- 1/2 cup oatmeal (ground)
- 1/2 cup frozen blueberries (wild/small)
Mash the banana, mix in the eggs, ground oatmeal and blueberries. Heat griddle (I use cast iron) over medium low heat, pour 1/6 of the mixture per pancake and flip when the edges start to firm up.

This is a favorite of mine. It’s super fast and healthy. It’s sweet enough from the fruit that you don’t need any extra sweeteners. The texture is just like a regular pancake and the flavor reminds me of crepes. So good! Great recipe for kids!
