Ingredients:
- 3 russet potatoes
- 3 tbsp olive oil
- 3 leeks bulb and a little of greens
- 2 cups chopped carrots
- Water
- 1 head of garlic
- 4 cups broccoli
- Salt and pepper to taste
Instructions:
In a large pan add olive oil and chopped leaks- sauté over medium heat. Add chopped carrots and stir. Meanwhile peel and chop potatoes then add them to the pot and stir then peel the garlic and add that too. Add enough water to just cover all the veggies in the pot. Cover and simmer until all veggies are tender. Add broccoli and cook for 10 more minutes. Using a hand blender blend the veggies until smooth. Season with salt and pepper and enjoy!
My notes on this recipe:
This is a nice vegan soup. The potato eats the flavor of the salt so be aware of that. For non vegan- Could add Parmesan cheese for added flavor. Would also pair nicely with sausage.
