Chicken Veggie Pasta

  • 1 16 oz box penne pasta
  • 2 chicken breasts sliced
  • 1 zucchini
  • 1 tbsp olive oil
  • 1 onion
  • 1 clove of garlic
  • Jar of tomato sauce
  • Salt and pepper to taste


Cook pasta as instructed on the box. Broil chicken on a lined baking sheet for ten minutes then let cool. In a large frying pan add olive oil, onion and chopped zucchini and sauté until the onions are translucent and the zucchini is soft then add the minced garlic clove and cook for 1 more minute. Add the sliced chicken then Add the tomato sauce and let simmer for 10 minutes. Mix the pasta and the sauce mixture and enjoy!

This is a big hit for the whole family. Simple ingredients but big flavor and very filling!
