- 1 cup spinach
- 2 scallions sliced
- 1/2 tbsp olive oil
- 1 tbsp lemon juice

I’m not a huge fan of this salad unless you have a blackberry in every single bite. It’s a nice vegan salad- would do well with a soup and some fresh baked bread!
