Ingredients:
- 16 oz black bean pasta
- 1 jar pasta sauce
- 1 onion
- 1 garlic clove
- 1 tbsp olive oil
- 1 zucchini
- 1 cup mushrooms
Instructions:
Heat olive oil in a medium pan on medium heat. Add onion and garlic and sauté for 1 minute. Add chopped zucchini and mushrooms and cook until soft. Add pasta sauce and simmer for 10 minutes. Cook black bean pasta in boiling water for 6 minutes then combine pasta and sauce mix and serve.

This is definitely delicious! You could double or even triple the vegetables and it would be ever better. Great vegan dinner! It’s super high in protein!
