BBQ chicken with quinoa and sweet potato mash

Makes 4 servings

  • 1 cup quinoa
  • 2 cups water or broth
  • 3 cups sweet potato
  • 2 chicken breasts
  • 8 tbsp BBQ sauce


Sweet potato mash– add water to a medium sized pot and boil. Meanwhile peel and dice sweet potatoes. Boil until tender- about 10-15 minutes. Drain 95% of the water and then mash.

Quinoa– place 1 cup quinoa in a pot with 2 cups water or broth and bring to a boil. Reduce heat to simmer and cook covered for 15 minutes.

Chicken– Slice chicken breasts into 1″ strips and place on a lined baking sheet. Broil for 10 minutes. Top with 2 tbsp of BBQ sauce per portion.
