Simple vegetable soup

Makes 4 servings


Carb:44.3 fat:14 protein:7.2


1 tbsp olive oil

3 yellow onions

2 garlic cloves

3 cups diced sweet potato

1 cup chopped carrots

1 cup chopped celery

6 cups chopped broccoli

5 cups water

Salt and pepper to taste.


Add olive oil to a large pot over medium heat and add onions and garlic, stir while chopping other ingredients and add those one at a time. When all the vegetables have been added then pour 5 cups water and bring to a boil. Lower heat to simmer and cover. Cook until all the vegetables are soft ( about 20 minutes) use a hand blender to purée. Add salt and pepper to taste. Serve and enjoy!

My notes on this recipe: For this one all I can say is sometimes less is more. I really enjoy the sweetness of the vegetables in this. Just lovely.
