Tuna curry salad

Makes 1 serving

1 cup spinach

1 can tuna

1 tbsp curry powder

1 tbsp mayo

1/4 cup raisin

1 tbsp balsamic vinegar


Mix tuna, mayo, raisins and curry powder in a bowl. In a serving bowl add the spinach then place the tuna mixture onto the spinach and dress with the balsamic vinegar and enjoy.

My notes on this recipe:

This is a spin off of another favorite of mine- chicken curry salad. While I find the chicken curry salad more enjoyable, this recipe is fast and much lower in fat. Other items that would be good in this are grapes and walnuts.
