Scallion salmon with herb rice

Makes 4 servings

4 – 4oz salmon filets

1 tbsp mayo

1 scallion thinly sliced

1 cup rice

2 tbsp garlic herb spice


Cook rice per package instructions but add tbsp garlic herb spice to the water. Meanwhile place salmon filets on a lines baking sheet. Coat each filet with 1/4 tbsp mayo then sprinkle with sliced scallions. Broil for 10 minutes and serve with rice.
