Ingredients:
2 cup diced potatoes
1 clove garlic
2 cup green beans chopped
2 cup carrots chopped
1 chopped red bell pepper
2 cups spinach
1 package of spaghetti
2 chicken breasts (omit for vegan)
Instructions:
Add diced potatoes and garlic clove to a small pot and cover with 1″ of water and boil until soft meanwhile Bring water for pasta to a boil. Meanwhile slice chicken breast into thin strips and place on a lined baking sheet. Sprinkle with salt and pepper. Broil for 10 minutes. Once the water is boiling add the pasta and cook for 4 minutes then add the chopped green beans and carrots to the boiling pasta and cook for 5 more minutes. Strain pasta and veggies and add bell pepper and spinach until combined. Lastly mash the boiled potatoes complete with the boiling water- add more water if needed to make the consistency of a sauce. Pour the potato sauce onto the pasta and veggies. Then top with chicken and add salt and pepper to taste. Enjoy.
My notes on this recipe: I find this recipe to be a bit bland personally but the children love this recipe and can’t get enough! Potatoes have a way of soaking up salt- so be aware of that. This recipe can easily be made vegan by omitting the chicken.
