Black bean and quinoa tacos

Makes 8 servings

1lb ground beef (omit for vegan)

2 cups black beans

2 cups diced tomatoes

1 package taco seasoning

1/2 cup quinoa

8 tortillas

8 tbsp guacamole


Cook quinoa per package. In a medium pan over medium high heat brown the ground beef. (Omit for vegan) Once fully cooked add rinsed and drained black beans, diced tomatoes and taco seasoning. Once the quinoa is cooked add it to the bean mixture. Place 2/3 cup onto a tortilla and top with 1 tbsp of guacamole. Enjoy

My notes on this recipe: This is amazing- works well with out without beef! The taste is just wonderful!
