Eggs with spinach and cottage cheese

Makes 1 serving

1/2 tbsp olive oil

2 cups spinach

2 eggs

6 tbsp cottage cheese

Salt and pepper to taste


In a large flying pan add olive oil and spinach. On medium heat sauté until the spinach is wilted. Add the eggs and scramble. Add the cheese and let melt for about a minute. Serve and add salt and pepper to taste.
